Sakai Takayuki

"Sakekiri" Knife is a Single bevel knife,originally designed for cutting hard bones of big fish, such as Salmon and slicing them into pieces. Functionally similar to Deba Knife, but wider and thinner blade with Black Forging Finish. 

This model  is the most reliable series for Professional use, created with the painstaking effort of top blacksmith craftsmen and knife grinders in Japan, which is made of Yasuki White Steel (Shirogami) #2.
