This model is made of INOX Molybdenum Stainless Steel for basic professional use, containing Chrome Molybdenum.
Sushi Kiri (Sushi Knife) is originally designed for cutting Sushi roll (Makizushi) or Oshizushi (Rice and Fish, put into a wooden mold/box) into desired thickness. It is double bevel with a wide blade and is also designed not to destroy the ingredients.
