This is a Sakai Kikumori "GOKUJYO" Professional Sujihiki Slicer, made of Yasuki White Steel (Shirogami/Shiroko)#2 with Professional Octagonal Handle.
Yasuki White Steel(Shirogami) is a grade type of Japanese High Carbon Steel that have had the majorities of impurities removed.
Yasuki White Steel is widely used for Japanese Traditional Professional Knives, such as Yanagiba, Deba,etc. Taking advantage of "Warikomi" Awase method, KIKUMORI apply to WA(Japanese Style Knife).Yasuki White Steel #2 at the core is squeezed into Jigane(Soft Iron).Highly recommended for Professionals.
